Mocha Chip Pie

In this episode, you’ll learn how to make a simple, yet deliciously sweet pie filled with oreos, coffee ice cream and more!

INGREDIENTS:
4 cups chocolate wafers filled with icing
3 tablespoon melted butter
1 quart coffee ice cream, softened
1/2 cup toasted sliced almonds
1 cup chopped toffee candy bar
8 ounces chocolate chips
1 tablespoon unsalted butter
2 tablespoons toasted sliced almonds

DIRECTIONS
Chop together the chocolate cookies and melted butter. Press mixture into a 9 inch pie shell and freeze for 10 minutes.
In a large bowl stir together the ice cream, almonds and chopped candy bar until well combined. Pour mixture into pie crust and freeze for 30 minutes.

Combine chips and butter in a measuring cup and microwave on high for 1 minute. Stir chocolate mixture and microwave for another 30 seconds if necessary. Drizzle mixture over frozen pie and sprinkle with 2 tablespoons toasted almonds, chill for 3 minutes in the refridgerator and serve cold. (*serve before chocolate topping hardens)

Chicken and Cheese Quesadillas

Enjoy some tasty and quick quesadillas by using this simple recipe and video:

INGREDIENTS:
Whole Wheat Tortillas
Pre-cooked Chicken Strips (Fajita or Mexican flavored)
4 oz. Monterey Jack and Chedder Cheese
2 tbs. Olive Oil

DIRECTIONS:
On medium heat, coat a frying pan with 1 tbs. of olive oil and cook two tortillas on both sides for three minutes each. While tortillas are getting slightly browned and crispy, heat up the pre-cooked chicken in a second frying pan for 5 minutes. When tortillas are done, place just one of them in frying pan and top with the heated chicken evenly. Next add the cheese scattered on top evenly as well. Top the chicken and cheese with the second tortilla and press down on it to help the cheese melt and glue the quesadilla together. After one minute, flip over to cook the other side for one more minute as well. Remove from the frying pan and cut the quesadilla into four triangles. Let cool and enjoy!



Chicken Spinach Salad and Balsamic Vinaigrette Dressing – Episode 6

FOR THE DRESSING

INGREDIENTS
1/2 cup extra virgin olive oil
1/2 cup white balsamic vinegar
1 clove crushed garlic
1 teaspoon ground mustard
1 pinch salt
ground black pepper to taste

DIRECTIONS
In a small bowl, whisk together olive oil, white balsamic vinegar, garlic, and mustard powder. Season to taste with salt and black pepper. Stir in minced fresh herbs if desired.

    FOR THE SALAD

INGREDIENTS:
6 oz. bag of baby spinach leaves
10 oz. package of pre-cooked and sliced chicken breasts (Purdue works well)
1 cucumber peeled and sliced

DIRECTIONS:
Heat the chicken on a grill pan for 4-5 minutes and let it cool down before topping your salad. Rinse spinach leaves and top with cucumbers. Add desired amount of dressing and you’re ready to eat!

Chocolate Chip Pie – Episode 3

RECIPE:
INGREDIENTS
1 recipe pastry for a 9 inch single crust pie
1 cup white sugar
1/2 cup all-purpose flour
2 eggs
1/2 cup butter, melted and cooled
1 cup pecans, coarsely chopped
1 cup semisweet chocolate chips
1 teaspoon vanilla extract
DIRECTIONS
In a mixing bowl, mix sugar and flour.
Stir in beaten eggs, butter, nuts, chocolate chips and vanilla. Mix well.
Pour mixture into pie crust. Place pie pan on cookie sheet. Bake in a preheated 325 degree F (165 degree C) oven for one hour.
